Imperial Rice Pilsner – All Grain Recipe

The Rice Pilsner, is light straw to golden colour and crystal clear. The Hops are very prevalent, usually with a spicy bitterness or a spicy floral flavour and aroma, notably one of the defining characteristics. Smooth and crisp with a clean malty palate with some good alcohol tones and a smooth body that helps the hops become more forward.

OG: 1.073 FG: 1.013
IBU: 36
ABV: 7.5% 
Volume: 21L   

Ingredients:
4.1kg Premium Pilsner Malt 
150g Acidulated malt 
2.3kg Flaked Rice/Rice
450g Premium Pilsner Malt
100g of US Magnum Hops   

Yeast Selection:
2x M76 Bavarian Lager Yeast (Cold)

Method:
1a Cereal Mash. Add Rice (Not Flaked Rice) and the 450g of Premium Pilsner
1b Raise temp slowly to 68ºC and rest for 15mins
1c Ramp up heat to a boil, boil for 30mins stirring occasionally.

1. Mash Grains @ 50ºC with 17L of water in a Grainfather & Protein Rest for 20 mins
2. Raise the temperature to 65ºC & Rest for 50 mins.
(If using Flaked Rice skip the cereal mash step and simply nash everything together, beginning with the protein rest at step 1.)
3. Raise the temperature to 76ºC & Rest for 10 mins
4. Start Sparge
5. Sparge with 13L of water as a single continuous sparge
6. Boil for 90 mins
7. At 90 mins add 10g of Magnum hops
8. At 10 mins add 15g of Magnum hops
9. At 5 mins add 30g of Magnum hops
10. At 0 mins cool to 85ºC quickly and whirlpool 40g Magnum hops for 20mins
11. Ferment between 10-15ºC for 10-14 days with 2 x yeast or…
11a. Ferment warm at 18-22ºC for 5-8 Days with 2 x M54 yeasts
12. Bottle or keg as usual

Optional: If kegging, reduce temperature to 1ºC to lager for 2-3 weeks before drinking
