Rye Malt Chocolate – Weyermann
Chocolate Rye Malt is highly kilned to enhance the aroma and roasted flavour of dark beers. It is ideally suited to Dunkelweizen, Roggenbier, Dunklel Rye, Porter, and other specialty ale styles. It can sometimes be a substitute for chocolate malt in stouts and porters.
It is suggested to use at a rate of around 1-5% of your grain bill. This malt is said to enhance the aroma of dark, top-fermented beers as well as improved colour and add a roasty character.
